Mushroom Tomato Egg Stir Fry |
And Old School ...
This month, I got chances to cook ... since my parent were out of town. It's a simple dish with anything that ready in my fridge.
Today, I'm gonna share Mushroom Tomato Egg Stir Fry ...
Ingredients:
1 Can Straw Mushroom (Cut, wash and squeeze the water out))
* Or Button (Champignon Mushroom) or Oyster Mushroom ...Use Anything You like
2 Egg (Scrambled)
1 Small Onion (Slice)
1 Clove Garlic (Mince)
2 Tomato ( Cute/Divide by 6)
1 Big Red Chili Pepper ( De-seed and slice)
1 Spring Onion (Cut)
1 Tsp Chicken or Mushroom Powder
1 Tbsp Oyster Sauce
A bit of water
How to cook it:
Stir fry Onion with a bit of oil then put in mince garlic and red chili, stir until fragrant, in go the Tomatoes.
After Tomatoes soften , In goes the Mushroom. Stir fry a bit to cook the Mushroom.
In goes Scrambled Eggs.
Next in the Oyster sauce, Chicken/ Mushroom pow and salt and a bit water ( depends how watery you want it, but remember this is a stir fry not a soup 😆)... check the taste and edit it as you see it fit according to you taste.
Last ... goes in the spring onion ... mixed a bit, serve!
Omit the Egg and use mushroom pow... then this dish would be fit for vegan (imo), but on other hand this dish also can use left over chicken if you like it... just not too much otherwise this would be a Chicken dish rather than mushroom.. but again ... if you like it, why not ^^
That's it ... easy simple and I can eat it just like that ( with rice of course) or eat with plain noodles.
